野菜摂取量不足の改善を目的に食物栄養専攻短大生(1群),文系・芸術系短大生(2群),40~50代主婦(3群)を対象に,摂取状況と意識に関してアンケート調査を行い学科専攻・年代別に比較検討した。緑黄色野菜摂取量は1群が最も多く,2群が少ない。淡色野菜は各群共,全国平均より多く1群が最も多い。摂取不足理由は1群が「1回で使い切れず腐らせる」2・3群が「主となる食材でない」を挙げ,旬に関係なく各群共たまねぎ,人参,キャベツ,ねぎ,じゃがいも,トマト,レタスの使用が高く使用量は3群が多い。一方,知らない・未使用野菜は,西洋・中国野菜が多い。旬を感じる野菜数は各群共夏が多く秋が少なく,知識も誤認識も3群が高かった。購入時気になることは,各群共一番が「鮮度」で,さらに,1・3群は安全性と経済性,2群はおいしさだった。調理法頻度では1・2群は「生」を,3群は「炒・煮」を高率で挙げていた。また,使用頻度の高い8種野菜(かぼちゃ,さつまいも,大根,白菜,ピーマン,ナス,きゅうり,キャベツ)の購入理由,購入時嗜好特性,おいしいと感じる調理法もみた。","subitem_description_type":"Other"}]},"item_1_source_id_13":{"attribute_name":"雑誌書誌ID","attribute_value_mlt":[{"subitem_source_identifier":"AN00271490","subitem_source_identifier_type":"NCID"}]},"item_1_text_9":{"attribute_name":"著者所属(日)","attribute_value_mlt":[{"subitem_text_value":"鹿児島純心女子短期大学生活学科"},{"subitem_text_value":"鹿児島純心女子短期大学生活学科"},{"subitem_text_value":"鹿児島純心女子短期大学生活学科"}]},"item_files":{"attribute_name":"ファイル情報","attribute_type":"file","attribute_value_mlt":[{"accessrole":"open_date","date":[{"dateType":"Available","dateValue":"2014-07-31"}],"displaytype":"detail","filename":"kiyo_30_07.pdf","filesize":[{"value":"94.2
